The lockdown has proven to be a great time to perfect your culinary skills at home! It doesn’t always have to be really complicated to make good grub, often the recipes we’ve been sharing on our social media have been really simple, easy to follow and of course, totally delicious! Here’s a recap of our favourite recipes by Anna over the past few weeks...
For a light lunch
If, like us, your first thought when thinking about making your own poke bowl is that it’s going to be too challenging, then we wholeheartedly urge you to have a rethink. Not only is this dish easy to make and perfect for a light lunch, it is also super healthy.
Although this one takes a little more prep and time, Anna’s spinach and sweet potato dahl is the perfect choice for a light lunch - whether it’s freshly made or leftovers from the night before.
For a delicious supper
There’s nothing quite so enticing than a rich lasagne for supper when staying cosy at home! A twist on a traditional beef recipe, Anna uses local salmon combined with spinach and leeks for this heart-warming dish.
One of the common myths about Indian cuisine is that a curry is so difficult to make from scratch, but with Anna’s recipe it couldn’t be simpler. A perfect quick supper when you don’t want to spend ages cooking, this curry is a true winner.
Anna’s stuffed squid recipe is the perfect dish to practice now, then serve to your friends at your first dinner party post-lockdown!
For a showstopper supper
Anna’s lucky to have the Best Fish Shop in the World right on her doorstep - Gurneys (gurneysfishshop.co.uk/), enabling her to get the freshest ingredients. Lockdown is the perfect time to try recipes you ordinarily wouldn’t have time for - and we urge you to give her fish stew a go!
Certainly one to impress your family at home, Anna’s sea bass recipe with capers and roasted tomatoes is surprisingly easy to cook with maximum wow factor.
For the sweet tooth
After a lovely hearty meal, you will obviously need something sweet to follow it. Look no further than Anna’s banoffee pie recipe; layers of cream, banana and toffee on a biscuit base - pure decadence.
After something a little lighter? We recommend Anna’s blueberry cake. A sweet treat to enjoy at any point in the day (even at breakfast, we won’t judge!)
Get an instant sweet-tooth fix with Anna’s coffee and walnut cake - we are loving the cake to frosting ratio here. Plus, feel no guilt when it comes to this cake - Anna uses coconut sugar in her mix, a healthier sugar alternative.
Are the other flavours not doing it for you? Enter the banana cake with chocolate covering - a sure winner! A surprisingly light cake, this easy sweet is a stay-at-home must.
